Mushroom quesadillas

My uncle's family took us to a CPK restaurant in DC, and I remember falling in love with this dish. Hoping my memory's not yet failing, here's my take on the dish:



tortilla bread
cheddar cheese, grated
mushroom, sliced
hoisin sauce

Scatter mushrooms on one tortilla, and top with cheese. Place another tortilla on top. On a hot skillet, toast the tortilla until it browns. Carefully flip and toast the other side. Cut into wedges and dip in hoisin sauce.
